I saw these fried egg tostadas in the May issue of Cooking Light.
They are quick, easy, delicious, and healthy - basically the perfect weeknight dinner.
Use the recipe below as a guide, but feel free to get creative with what you have in your pantry or fridge.
Fried Egg Tostadas
From: Cooking Light
Servings: 2 (3 tostadas)
Time: About 10 minutes
Ingredients:
- 6 6-inch corn tortillas
- 6 eggs
- 6 Tbsp shredded part-skim cheddar
- 12 Tbsp salsa
- sliced green onions
(Diced onions and sliced olives would also be great on these!)
Directions:
Preheat oven to 350 degrees.
Place the tortillas directly on the oven rack and back for 8-10 minutes or until crisp.
Fry eggs until desired level of done-ness.
Place a fried egg on top of each crisp tortilla and then top with one sixth of the cheddar, salsa, and green onions.
