Chicken & Waffle Sandwiches

Chicken and waffles. Pretty widely accepted as a great combination. This recipe swaps fried chicken for the deli variety, but don't worry, it is still plenty delicious. Chicken, waffles, bacon, yummy mayo sauce, what's not to love?

We love making these on days when it's too hot to turn on the oven, or the stove, or really anything other than the grill or microwave. 

Crisp your bacon in the microwave, toast the waffles, mix up the sauce and maybe toss together a side salad and you have a quick, tasty meal in no time. 

This recipe has made it into our regular rotation. You should definitely try it soon!

Time: about 10 minutes
Servings: 4 servings

Ingredients:
- 4 slices of bacon
- 3 tbsp of mayonnaise
- 1 tbsp buttermilk
- 1 tsp cider vinegar
- 1/4 tsp sugar
- 1/4 tsp garlic powder
- 1/8 tsp black pepper
- 8 whole-grain waffles
- 6 oz thinly sliced, lower-sodium deli chicken breast
- 8 slices of ripe tomato (we left this out, not huge tomato fans)
- 4 slices of red onion (added this in place of the tomato)
- 4 Boston bibb lettuce leaves

Directions:
Cook bacon between paper towels in the microwave to desired amount of crispy-ness.

Toast waffles to desired level of crispy-ness.

Combine mayonnaise, buttermilk, cider vinegar, sugar, garlic powder, and black pepper in a bowl.

Spread mayonnaise mixture evenly over 4 of the waffles. Divide chicken, tomato, and lettuce evenly among the waffles with the mayo mixture. Break each piece of bacon in half and place on top of sandwiches. Top with remaining waffles and serve!
